The coffee actually tasted unripe. By unripe, I mean that common unripe taste you get from unripe fruits, like unripe bananas or unripe avocados. The citric taste was also very strong. It was sour enough that I blurted โ€œsour!โ€ out loud and my eye twitched a little. Especially prominent in the front. Like one or two drops of lemon juice were added.

It tasted like something between green and ripe. It was absolutely delicious. From here, there was a slightly fermented taste, like it had a bit of gas. Is this what people call aroma? Anyway, itโ€™s a taste I really love. It only comes from certain coffee beans and good quality beans. When setting the grinder, if I use 5.5 tick, it barely drains within 3 minutes, taking 3 minutes 30 seconds to 4 minutes. I stop before it fully drains, leaving a little bit at the end. I also tried grinding with a mix of 5, 5.5, and 6 a few times, but using a single grind setting felt more delicious and had fewer off-flavors. To know for sure, Iโ€™d need a few more A/B tests.

[4th, 5th week after roasting]

The sweetness came out the most, and the acidity was much more toned down. The funkiness also increased. This bean has really good balance. It has acidity, sweetness, and funkiness all present, but none of them jump out too much; itโ€™s a well-balanced taste. Among them, whatโ€™s special is the subtle funkiness, that taste someone might describe as aroma.

It was truly delicious until I finished all the beans.

[When brewed with a ceramic Origami dripper]

When brewed with the Origami ceramic dripper, it tasted underextracted. By underextracted, I mean the sweetness was definitely less, the acidity remained and felt more prominent, and the taste was less complex and shallow. I still donโ€™t really know how to brew deliciously with the Origami dripper.

[When brewed with a Kalita]

The taste felt a bit less balanced. The Kalita dripper has a flat bottom and three holes. If itโ€™s even slightly unlevel or one hole gets blocked, the extraction wonโ€™t be even. And if you pour water a little too strongly, causing too much agitation, fines can easily block the holes and slow down extraction. For me, itโ€™s a dripper thatโ€™s harder to be consistent with than I expected. Itโ€™s not as difficult as the Origami, and I can brew without issue if I focus. Still, I donโ€™t know what aspects of the taste outcome are better than the V60. In the end, I mostly use the V60.

[When I accidentally got distracted and left the bloom for 1 minute 20 seconds]

I accidentally got distracted and left the bloom for 1 minute 20 seconds. And then it tasted strange. I canโ€™t really describe the strange taste in a tasting note. My guess is that it was left too long after the bloom, the bean temperature dropped significantly, and something happened. (probably underextraction)
